The Dean and Stark distilling apparatus is a laboratory apparatus used to separate water from organic compounds. It was developed by British chemist Dr. Norman Edward Dean and American chemist Dr. Ernest Woodward Stark in the early 20th century.
The apparatus consists of a round-bottomed flask with a side arm, connected to a water-cooled condenser. The side arm contains a stopcock and is filled with a drying agent such as calcium chloride or magnesium sulfate. The organic compound is placed in the flask with an excess of water, and the mixture is heated under reflux. The water and organic compound vaporize together and condense in the condenser, where the water and organic layers separate due to differences in density. The stopcock on the side arm is then opened, allowing the water layer to be drained off and collected.
